Recipe Information
Preparation Time: 15 minutes
Resting Time: 5 minutes
Baking Time: 5–7 minutes
Makes: 2 medium pizza bases
Cooking Method: Oven
Cuisine: Italian-inspired homemade recipe
Ingredients
For 2 medium-sized pizza bases, you will need:
- 1 cup Maida (All-Purpose Flour)
- ½ cup Curd/Yogurt, approximately
- ½ teaspoon Baking Soda
- ½ teaspoon Baking Powder
- Salt to taste
- A pinch of Powdered Sugar
- 2 tablespoons Oil
- Extra Maida for rolling and dusting
How to Make Pizza Base Without Yeast
Step 1 – Preheat the Oven
Preheat your oven to 200°C for 10 minutes.
While the oven is preheating, prepare the pizza dough.
Step 2 – Mix the Dry Ingredients
Take the maida in a large mixing bowl.
Add:
- Baking soda
- Baking powder
- Salt
- A pinch of powdered sugar
Mix all the dry ingredients well.
Step 3 – Prepare the Dough
Start adding the curd little by little while kneading.
Do not add all the curd at once. Add only as much as required to make a soft dough, similar to chapati dough.
Add the oil and knead the dough again until everything is combined properly.
Let the dough rest for approximately 5 minutes.
Step 4 – Divide and Roll
After resting, knead the dough again for about 2 minutes.
Divide it into 2 equal portions.
Dust your work surface with a little dry flour and roll each portion into a medium-sized round pizza base.
Do not roll the base too thin.
Tip: Don't worry if you cannot make a perfect circle. You can use a round plate, bowl or cutter to trim the edges. 😊
Step 5 – Prick the Pizza Base
Using a fork, gently prick the pizza base all over, leaving a little space between the holes.
This helps prevent the base from puffing up too much while baking.
Step 6 – Prepare the Oven Tray
Sprinkle a little dry flour over the oven tray.
Carefully place the rolled pizza bases on the tray.
For my oven, I place the tray on the third shelf while baking the bases.
Oven settings can vary, so keep an eye on the base during the final few minutes.
Step 7 – Bake the Pizza Base
Bake at 200°C for approximately 5–7 minutes.
The pizza base only needs to be lightly baked at this stage because it will be baked again after adding your pizza toppings.
Remove it from the oven.

How to Use Your Homemade Pizza Base
Once the base is ready, spread pizza sauce evenly over it.
Add mozzarella cheese and your favorite toppings such as:
- Onion
- Capsicum

- Paneer
- Sweet corn
Sprinkle oregano and chilli flakes, add some more cheese and bake until the cheese melts beautifully.

Frequently Asked Questions
Can I make pizza base without yeast?
Yes. This recipe uses curd, baking powder and baking soda instead of yeast, making it a quick option when you don't want to wait for yeast dough to rise.
Why do we prick the pizza base with a fork?
Pricking helps prevent large air pockets from forming while the base is baking.
Can I prepare the pizza base beforehand?
Yes. You can lightly bake the base first and use it later for making your pizza. Allow it to cool completely before storing it.
Why shouldn't I bake the base completely?
The base will go back into the oven after you add pizza sauce, cheese and toppings. Overbaking it during the first stage may make the final pizza harder or too crisp.
Can I make a thin-crust pizza with this dough?
You can roll the dough slightly thinner, but watch the baking time carefully because a thinner base will cook faster.
