Healthy Vegetable Soup Recipe | Easy Homemade Veg Soup with Rice
There is nothing more comforting than a warm bowl of homemade vegetable soup. This easy vegetable soup is loaded with colorful vegetables, sweet corn and simple seasonings, making it a delicious option when you want something light yet satisfying.
What I especially like about this recipe is that it can be enjoyed in two ways — have it on its own as a warm soup or serve it with steamed rice to turn it into a more filling meal.
The recipe uses very little oil and plenty of vegetables, while cornflour gives the soup a smooth, slightly thick consistency.

This is one of those simple recipes that you can easily adjust according to the vegetables available in your kitchen.
It uses a colorful combination of capsicum, carrot, beans, broccoli and sweet corn. Garlic, black pepper, soy sauce, green chilli sauce and vinegar give the soup its delicious Indo-Chinese-style flavor.
You can also control the consistency. Keep it slightly thin if you're having it as soup, or make it a little thicker when serving it with rice.
Ingredients
Vegetables
- 1 onion, thinly sliced
- 2 capsicums, cut into small cubes
- Red and yellow bell peppers, cut into small cubes
- 1 carrot, cut into small pieces
- A few green beans, chopped
- 4–5 garlic cloves, finely chopped or grated
- ½ cup broccoli
- 1 cup steamed sweet corn
Other Ingredients
- 2 teaspoons oil
- Salt to taste
- Black pepper to taste
- A pinch of Ajinomoto/MSG – optional
- 3 tablespoons cornflour
- Approximately 1 litre water, or as required
- 2 teaspoons soy sauce
- 2 teaspoons green chilli sauce
- 1 teaspoon vinegar, or according to taste
How to Make Homemade Vegetable Soup
Step 1 – Partially Cook the Carrot and Beans
Take about 1 cup of water in a pan.
Add the chopped carrot and beans along with a small pinch of salt. Boil them for approximately 5 minutes.
Do not throw away the remaining water after boiling the vegetables. Keep it aside because we can use this vegetable water later in the soup.
Step 2 – Sauté the Garlic and Onion
Heat 2 teaspoons of oil in a pressure cooker or deep cooking pot.
Add the finely chopped garlic and stir for about 1–2 minutes.
Now add the sliced onion and cook briefly on a higher flame. The onion should become slightly soft, pink and glossy. Avoid browning it too much.
Step 3 – Add the Vegetables
Add the green capsicum, red and yellow bell peppers and broccoli.
If you are using Ajinomoto/MSG, you can add a small pinch at this stage. It is completely optional.
Cook the vegetables for around 5 minutes, stirring occasionally.
Now add the partially cooked carrot and beans and continue cooking for another 2 minutes.
The vegetables should soften but still retain some texture.
Step 4 – Season the Soup
Add salt according to taste and sprinkle in some black pepper.
Pour in the reserved vegetable water followed by additional water according to how much soup you want to prepare.
Now add the steamed sweet corn.
Bring everything to a boil.
Step 5 – Prepare the Cornflour Slurry
While the soup is coming to a boil, put 3 tablespoons of cornflour in a small bowl.
Add a little water and mix thoroughly until you have a smooth, lump-free slurry.
Step 6 – Thicken the Soup
Once the soup starts boiling, gradually pour in the cornflour slurry while stirring continuously.
Do not add all the slurry at once.
Add a little at a time and watch the consistency. Stop when the soup reaches the thickness you prefer.
If the soup becomes thicker after sitting for some time, simply add a little hot water before serving.
Step 7 – Add the Sauces
Lower the flame and add:
- 2 teaspoons soy sauce
- 2 teaspoons green chilli sauce
- 1 teaspoon vinegar, or according to your taste
Mix everything well.
Bring the soup to a gentle boil, cover with a lid and cook on low heat for approximately 2 minutes.
Your homemade mixed vegetable soup is ready. 🥣
How to Serve Vegetable Soup
Serve the soup piping hot on its own for a light meal.
You can also serve it over freshly steamed rice, just as I have shown in the picture. The slightly thick vegetable soup combines beautifully with rice and makes the dish much more filling.
Tips for the Best Vegetable Soup
For better texture, avoid overcooking the vegetables. A little bite in the capsicum, beans and carrots makes the soup much more enjoyable.
Always mix cornflour with cold or room-temperature water before adding it to the hot soup. Adding dry cornflour directly can create lumps.
Add the cornflour slurry gradually because the soup continues to thicken as it cooks.
Soy sauce already contains salt, so taste the soup before adding extra salt toward the end.
You can adjust the green chilli sauce and vinegar according to your preferred level of spice and tanginess.
