Boil the Pasta

Bring one litre of water to a rolling boil. Add salt and the penne pasta. Cook until the pasta is tender but still has a slight bite. Drain the pasta and rinse it under cold water to stop the cooking process. Reserve a small bowl of the pasta water for later.

Keep it aside while you prepare the vegetables.

Heat a little oil in a non-stick pan. Add the grated garlic and sauté it for a minute until fragrant. Now add the chopped onions and cook them on a medium flame until they turn soft and slightly pink.
