Ingredients

Main Ingredients

  • 500 g mutton (chaap and nalli pieces)
  • 2 tablespoons cooking oil
  • 1 teaspoon ghee
  • 2 tablespoons fresh curd

Onion, Ginger & Garlic Paste

  • 2 medium onions
  • 5–6 garlic cloves
  • 1-inch ginger

Tomato Puree

  • 3–4 medium tomatoes
  • 2 green chillies

Whole Spices

  • 3–4 cloves
  • 3–4 black peppercorns
  • 1 black cardamom
  • 1 cinnamon stick
  • 2 bay leaves

Spice Powders

  • Salt to taste
  • ½ teaspoon turmeric powder
  • ½ teaspoon Kashmiri red chilli powder
  • 1½ teaspoons coriander powder
  • 1 teaspoon meat masala
  • ½ teaspoon black pepper powder
  • ½ teaspoon roasted cumin powder
  • 1 teaspoon garam masala
  • Crushed Kasuri methi

Step-by-Step Method

Step 1 – Prepare the Masala Base

Heat oil in a pressure cooker. Add the whole spices and sauté for about 2 minutes until fragrant.

Add the onion, ginger, and garlic paste and cook over medium-high heat until it turns deep golden brown. A small pinch of salt helps the onions brown evenly.

Step 2 – Add the Spices

Add turmeric powder and Kashmiri red chilli powder. Cook for about 2 minutes.

Mix in the crushed Kasuri methi and a splash of water to prevent the spices from burning.

Now add the tomato puree and cook until the oil starts separating.

Add coriander powder, meat masala, black pepper powder, roasted cumin powder, and salt. Mix well and cook for another 5–7 minutes.

Step 3 – Cook the Mutton

Add the mutton pieces and coat them well with the masala.

Cover and cook on medium heat for about 10 minutes without adding water. This helps the mutton release its natural juices.

Step 4 – Bhunai

Once the moisture reduces and the oil starts separating, add the ghee and sauté continuously until the masala develops a rich brown color. This step creates the deep Mughlai flavor.

Step 5 – Pressure Cook

Add about one glass of hot water, depending on how much gravy you prefer.

Sprinkle in the garam masala.

Close the pressure cooker and cook until the mutton is tender. The number of whistles may vary depending on the cut and quality of the mutton.

Allow the pressure to release naturally before opening the cooker.

Step 6 – Garnish & Serve

Garnish with freshly chopped coriander leaves and serve hot with naan, tandoori roti, paratha, or steamed basmati rice.
