Restaurant Style Soya Chaap Masala Recipe

Tender soya chaap pieces are lightly fried and simmered in a rich onion-tomato gravy infused with aromatic spices, kasoori methi and fresh cream. This delicious curry pairs perfectly with butter naan, tandoori roti, paratha or jeera rice and is ideal for family dinners or special occasions.
Ingredients
For Frying
- 250 g Soya Chaap
- 2 tbsp Oil
For the Masala Paste
- 2 Medium Onions
- 6–8 Garlic Cloves
- 2 Medium Tomatoes
- 1 Green Chilli
Whole Spices
- 2 Bay Leaves
- 4 Cloves
- 8 Black Peppercorns
- 1-inch Cinnamon Stick
Powdered Spices
- Salt to taste
- 1 tsp Red Chilli Powder
- ½ tsp Turmeric Powder
- 1½ tsp Coriander Powder
- ½ tsp Garam Masala
- 1 tsp Meat Masala (optional for restaurant-style flavour)
- ½ tsp Black Pepper Powder
Finishing
- 1 tsp Kasoori Methi
- 2 tbsp Fresh Cream
- ½ tsp Sugar (optional)
- Fresh Coriander Leaves
- Water as required

Method
Step 1 – Fry the Soya Chaap
Wash the soya chaap and pat it dry. Heat oil and fry the pieces over medium-high heat until they turn light golden brown. Remove and keep aside.
Step 2 – Prepare the Masala Paste
Cook the onions, garlic, tomatoes and green chilli in a little oil until the tomatoes soften. Allow the mixture to cool, then blend it into a smooth paste.
Step 3 – Cook the Gravy
Heat fresh oil and add the bay leaves, cloves, peppercorns and cinnamon. Once aromatic, add the prepared onion-tomato paste.
Cook until the paste thickens.
Now add:
- Salt
- Red Chilli Powder
- Turmeric
- Coriander Powder
- Garam Masala
- Meat Masala
- Black Pepper
Cook until the oil starts separating from the masala.
Step 4 – Simmer
Add water to achieve your preferred gravy consistency.
Mix in the fried soya chaap, kasoori methi, cream and a tiny pinch of sugar if required.
Cover and cook on low heat for 10–15 minutes so the chaap absorbs all the flavours.
Finally garnish with chopped coriander leaves.
Serve hot.

- Frying the chaap first gives it a better texture.
- Cook the masala patiently until the oil separates.
- Fresh cream adds richness, but you can reduce the quantity for a lighter version.
- Kasoori methi gives the authentic restaurant aroma.
