Ingredients
Method.
Start by preparing the marination. Take a large mixing bowl and add the curd, Add the ginger-garlic paste, salt and Kashmiri red chilli powder then add red chilli powder then roasted cumin powder, tandoori chicken masala, black pepper powder and crushed kasoori methi put chaat masala, and garam masala. Mix everything well until you get a smooth and thick marination ready with all the spices evenly combined.
Now add the cleaned and dried mushrooms, onion cubes, capsicum, and bell pepper to the bowl. Gently mix everything so that each mushroom and vegetable piece is coated with the marination. Using your hands works best, but you can also use a spoon or spatula . Once everything is coated, cover the bowl and keep it in the refrigerator for at least 30 minutes. If you have more time, letting it marinate for up to one hour will give even better flavor.
After marinating, pierce the mushrooms and vegetables into small wooden skewers, alternating between mushrooms, onions, and peppers. This not only looks attractive but also helps everything cook evenly. If you're using wooden skewers, soaking them in water for about 20 minutes beforehand can help prevent them from burning.
Lightly brush the skewers with a little oil on all sides. Preheat your air fryer if needed, then place the skewers in the air fryer basket in a single layer. Make sure they are not overcrowded so the hot air can circulate properly. Cook at 160°C for about 10 minutes. Halfway through the cooking time, turn the skewers over so they cook evenly on both sides. If you like a slightly more roasted, you can cook them for another 2–3 minutes while keeping an eye on them.
Once the mushrooms are tender and the vegetables are lightly charred around the edges, remove the skewers from the air fryer. Sprinkle a little extra chaat masala on top if you like, and serve them hot.
