Ingredients for Vegetable Pulao Rice
- 1 cup basmati rice, pre-soaked for 15 minutes
- 2 cups water
Whole Spices
- 3–4 cloves (laung), slightly crushed
- 1 black cardamom (moti elaichi)
- 4 whole black peppercorns (kali mirch)
- 1 small piece cinnamon (dalchini)
Oil & Ghee
2 teaspoons cooking oil
1 teaspoon desi ghee
- 1 teaspoon additional ghee while sautéing the vegetables, optional
- Vegetables & Aromatics
- 5–6 garlic cloves, finely grated
- 1 medium onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chillies, cut lengthwise
- ½ cup green peas
- ½ cup carrots
- ½ cup broccoli
- Fresh coriander leaves, finely chopped
- Powdered Spices
- Salt to taste
- ½ teaspoon Kashmiri red chilli powder
- ½ teaspoon coriander powder (peesa dhania)
- ½ teaspoon garam masala
- 1 teaspoon chana masala, biryani masala or meat masala
- Black pepper powder to taste
- A little kasuri methi
How to Make Easy Vegetable Pulao
Step 1 – Wash and Soak the Rice
Wash 1 cup of basmati rice gently until the water becomes reasonably clear.
Soak the rice in water for approximately 15 minutes and then drain it.
Soaking the rice before cooking helps the grains cook more evenly and gives the finished pulao a better texture.
Step 2 – Temper the Whole Spices
Heat 2 teaspoons cooking oil and 1 teaspoon desi ghee in a deep kadai or cooking pot.
Add cloves, black cardamom, whole black peppercorns and cinnamon.
Allow the spices to fry for a few seconds until you can smell their wonderful aroma.
Now add the finely grated garlic and sauté gently. Don't let the garlic burn.
Step 3 – Fry the Onion
Add the finely chopped onion.
Cook on medium heat until the onion becomes soft and turns a beautiful golden-brown color.
Taking a little time at this stage adds much more flavor to the final pulao.
Step 4 – Add Tomatoes and Green Chillies
Add the finely chopped tomatoes and sliced green chillies.
Mix well and cook until the tomatoes soften and combine nicely with the onions.
Step 5 – Add the Masalas
Now add salt, Kashmiri red chilli powder, coriander powder, garam masala, chana masala or biryani/meat masala, black pepper powder and a little kasuri methi.
Mix everything properly and cook briefly so that the masalas blend with the onion and tomato mixture.
The extra masala gives this vegetable pulao a deeper flavor and makes it different from a very plain pulao.
Add the Vegetables
Now add the green peas, carrots and broccoli.
Mix everything well and sauté the vegetables for a few minutes on high heat.
At this stage, I like adding around 1 teaspoon desi ghee. It gives the vegetables and rice a lovely richness and aroma.
Don't cook the vegetables completely because they will continue cooking after we add the rice.
Add the Rice and Water
Add the soaked and drained basmati rice.
Mix it gently with the vegetables and masala. Be careful not to break the rice grains.
Now add 2 cups of water.
Check the salt and adjust if required.
Cook the Vegetable Pulao
Cover the pot and cook initially on high heat until the water begins to boil.
Once it starts boiling, reduce the flame and allow the rice to cook gently.
Keep the pot covered and avoid stirring the rice repeatedly.
Cook until the rice has absorbed the water and the grains are tender.
Once the water has evaporated, switch off the heat and leave the pulao covered for a few minutes.
Open the lid and gently fluff the rice.
Finish with freshly chopped coriander leaves.
Your delicious homemade Vegetable Pulao is ready to serve.

Soak the rice: Soaking it for around 15 minutes helps the grains cook nicely.
Don't burn the whole spices: They only need a short tempering to release their aroma.

Mix the rice gently: Once the soaked rice is added, avoid vigorous stirring.
Use a little ghee: Even a small amount gives the pulao a richer aroma.
