Method
Begin by grinding the onion and garlic into a smooth paste. Blend the tomatoes separately to make a fine puree.
Heat oil in a pressure cooker and add the bay leaf and cinnamon. Let them release their aroma for a few seconds before adding the onion-garlic paste.
Cook the paste over a medium flame until it turns golden brown. Adding a little salt at this stage helps the onions cook faster and develop a rich flavor.
Now add turmeric powder and kasuri methi, followed by the tomato puree. Stir well and cook until the masala thickens and the oil begins to separate.
Add coriander powder, red chilli powder, garam masala, MDH masala, and mix everything well.
Next, add the potato cubes and coat them thoroughly with the masala. Cook for a few minutes so the potatoes absorb all the flavors.
Carefully add the paneer cubes and mix gently so they remain intact.
Pour in about one to one and a half cups of water, then add one teaspoon of ghee for extra richness.
Close the lid of the pressure cooker and cook for three whistles.
Allow the pressure to release naturally before opening the cooker. Check that the potatoes are soft and perfectly cooked.
Finish by garnishing with freshly chopped coriander leaves and serve hot.
