  • 2 tbsp Ginger-Garlic Paste
  • Juice of 1 Lemon
  • 1½ tbsp Mustard Oil (or cooking oil)

  • Melted Butter

Step 1 – Prepare the Marinade

In a large bowl, combine the curd, salt, Kashmiri red chilli powder, coriander powder, garam masala, roasted cumin powder, black pepper, tandoori chicken masala, ginger-garlic paste, and lemon juice.

Step 2 – Prepare the Mustard Oil

Heat the mustard oil until it just begins to smoke. Remove it from the heat, stir in the turmeric powder, and let it cool slightly. Add this to the marinade and mix well.

Step 3 – Marinate the Chicken

Make a few shallow slits in the chicken pieces so the marinade can penetrate well. Coat the chicken evenly with the marinade.

Refrigerate for at least 8 hours, preferably overnight.

Optional: If you need to shorten the marination time, add about 1½ teaspoons of vinegar while marinating.
